Journey of Quality: A day in Sucafina’s quality control lab from samples to roast
In our first ROEST webinar of 2025, we went behind the scenes of Sucafina’s coffee quality control process with Quality Control Coordinators Lisa Taddei and Lydia Moschopoulou. They walked us through evaluating different green coffee samples through physical grading and sensory analysis. We also discovered the importance of sample roasting in understanding a coffee’s potential and how it differs from production roasting. Finally, we explored how we use sample roasting to experiment with coffee profiling, revealing the impact of region and processing methods on flavor.

After working in marketing and translation, I discovered my passion for specialty coffee, which marked the beginning of my journey in the coffee industry. I started as a barista and trainer, where I developed a deep appreciation for the craft, and then transitioned into green coffee. Throughout this journey, I’ve focused on enhancing the virtues of this product while respecting the people who produce it. Now, as a QC Coordinator with the incredible team at Sucafina NV, I get to do what I love every day: pursuing great flavors and helping people find their perfect coffee.

Quality Control Coordinator at Sucafina
My journey with coffee began in 2015 when I first tasted a specialty coffee in a V60—it was tasty! From that moment, I knew I wanted to learn more about coffee.
Over the years, I’ve worked as a barista, a roaster, and as an Authorized SCA trainer for three years. Now, I’m happy to be part of Sucafina's NV team as a Quality Control Coordinator and to work in sales for Greece, Cyprus, and Romania. Every day, I get to do what I love: tasting delicious coffees and connecting with people.
