Journey of Quality: A day in Sucafina’s quality control lab from samples to roast
In our first ROEST webinar of 2025, we went behind the scenes of Sucafina’s coffee quality control process with Quality Control Coordinators Lisa Taddei and Lydia Moschopoulou. They walked us through evaluating different green coffee samples through physical grading and sensory analysis. We also discovered the importance of sample roasting in understanding a coffee’s potential and how it differs from production roasting. Finally, we explored how we use sample roasting to experiment with coffee profiling, revealing the impact of region and processing methods on flavor.
